As I Brewed

I've been brewing kombucha for a few months now, I've brewed it before for a while but let my scobys die so I started over. I've never liked how you are supposed to use sugar in it even if it is 'organic' sugar, it still eats the vitamin C in your body besides being totally dead calories. Old Scobys

I had some scobys left over from before so I tried to revive them after they had been in the fridge for almost 3 years, guess they were very dead as all it did was grow some really nice looking mold.

This time I started with a regular scoby using earl grey tea witch I found out the flavoring in it will kill the scoby so I switched to organic Assam tea and switched to 'organic' sugar then I bought a Jun scoby and started using kukicha tea with a local honey, very nice.

First new batch

My first batch of regular kombucha turned out ok but I didn't have any small jars for the second fermentation so I put it in 1/2 gallon jars and didn't use anything for sweetener/flavor, as I don't drink it for that. One of the jars had a scoby in it so I used that to try to turn a regular scoby into a honey scoby/kombucha. So I started a with half in a gallon jar, regular tea with honey, it actually turned out really good, I started putting honey in for the second fermentation and got good fizz so now I only have 2 going instead of 3 and one is regular tea with honey and the other is Jun with kukicha and honey.

Now I'm using a mix of honey and lemon juice for my second ferment as I drink after eating and don't mix fruit and veggies but wanted something to drink that wasn't too fruity, going to have to cut down from 1/4 cup to 1/8 as it was way too fizzy.

Continuous Brew

one gallon drink dispenser with stainless steel spigotI use what some people call a continuous brew method but I don't do it like I've heard a lot of them do, take a few glasses out of it then put some brew mix back in to fill it up, I use a container that has a spigot on it but only take the kombucha out of it all at one time for the second ferment.

Bottling setup

I use a stainless steel funnel to get the brew into the bottles. I have my brew containers on wire shelves wrapped with a heater band, I hook the funnel to the shelves then stick one end in the bottle, add lemon/honey mixture, open the valve on the container till it gets within 1 inch of the top, cap it and set it on the shelf.

I haven't brewed in a while and I still and I still have over 8 bottles in the fridge.

I did find something interesting tho, I drank half a bottle one night then left it out for a few days and it grew a scoby, so I was thinking I have some very potent Kombucha.

Bottled another batch, 4 Kombucha 4 Jun.

I am doing the addition of honey a new way, was adding it to the bottles then adding the brew to the bottles but now I'm filling the bottles to here with brew then adding honey till it gets to here. I figured out that this is almost exactly 1 Tbs. so it's a little more accurate.

I'm going to hold off on making any more for now as I have these 8 plus another 24 in the fridge, I can't drink it fast enough.

Bottled 4 of each, Kombucha and Jun.

Started new batch brewing, 10 cups of water/tea for each.

Brewed another batch of both, Assam and Kukicha tea with honey.

Bottled both Kombucha and Jun using 1 tablespoon of honey, lemon turned out to be very strong, will see if cutting the lemon in half next time will be okay.

Yield: 5 and 5.

Bottled both brews using 1/8 cup honey/lemon mixture.

Yield: 5 bottles each.

Brewed a batch of both, cleaned the regular kombucha brew jar finally, and removed some of the scobys leaving the last one that grew from last batch.

Brewed both Jun and Kombucha.

Bottled both Jun and Kombucha using 1/8 cup of honey/lemon mixture as I think the last batch was too fizzy.

The lemon pulp had a tendency to float above the top of the brew and cling there, had to shake bottles to get it to incorporate itself back into the brew.

Just glad none of the bottles blew up so far.

Yield: 5 Jun, 4 Kombucha, will start noting yields, has been about this much for each so far, depending on how often I taste them to tell it they are ready.

Bottled using 1/4 cup of the 1/2 and 1/2 honey lemon juice mixture per bottle.

Bottled using a 1/4 cup of honey lemon juice mixture, lemons were peeled then pureed in blender, added equal amount of honey to lemon juice.

Start first full gallon brew of honey kombucha using Assam tea, henceforth to be known as simply Kombucha.

Bottled first batch of regular kombucha into 1/2 gallon jars, no sweetener/fruit.

Bottled Jun into a 1/2 gallon jar and pints, no sweetener/fruit. Was rather vinegary.

Using a Jun scoby I brewed it with kukicha tea and honey in glass gallon jar with spigot.

Using regular sugar and Earl Grey tea and standard Scoby, 1 gallon in regular glass jar.
